Crab Cakes

4 Servings (12 crab cakes total)
1 pound crab meat (picked over to remove any shells/cartilage)
1 bunch green onions, chopped
1 egg, beaten
Zest and juice of 1 lemon
Salt & pepper
Preheat oven to 350F.
In a bowl, mix together the crab meat, onions, egg, lemon zest and juice. Season the mixture with salt and pepper. Scoop out two tablespoons of the crab mixture and form into a patty, squeezing out any excess liquid as you go. Place the crab cake on a baking sheet lined with a silicon mat or foil. Continue making patties until all of the crab mixture is gone. Place the baking sheet in the oven and bake until crab cakes are lightly golden (approximately 20 minutes). Remove from the oven and allow to cool slightly before gently transferring the crab cakes to serving plates. Enjoy! --Erin O’Brien

Banana Bread Gone Paleo

Ingredients:
  • 3 ripe bananas
  • 3 eggs
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 2 tbs honey (you can add more if you like it sweeter. some of the sweetness of the batter will cook off)
  • 2 cups of almond flour
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 cup chopped walnuts (optional)
I think this is easiest done in a food processor because it creams the banana really nicely. If you do not have one, just mix the first 5 ingredients in one bowl creaming the banana as much as you can.  Mix the remaining 4 ingredients except the walnuts in another.Add the dry ingredients to the wet then fold in your walnuts.(**If you have a food processor, process the first 5 ingredients together first until it becomes nice and creamy. Add the remaining four ingredients and pulse several times until well incorporated. Next add the walnuts (optional) pulse once or twice.)Pour the batter into a greased loaf pan.  Add some walnuts (optional) to the top of the batter then put into a pre heated 350 degree oven. Bake for about 45 minutes. Check for doneness by inserting a toothpick. If it comes out clean it is done. --Courtesy of Mom Gone Paleo

Amazing Paleo Bread

From CookingCaveman.com:

Here’s the recipe for the perfect loaf of paleo bread (based on a 9x5x3 loaf pan or slightly smaller):
  • 4 or 5 pasture raised eggs (depending on the size, if they’re huge, use 4, if small, use 5)
  • 1 1/2 cups of organic almond butter
  • 1 1/2 tablespoons of organic lemon juice (or white vinegar)
  • 3/4 teaspoon of baking soda (which turns it from paleo to paleo-ish)
  • a couple dashes of sea salt (optional)

Mix the eggs and almond butter first, then add remaining ingredients.  Pour into a slighly greased 9x5x3 loaf pan.  I used coconut oil to grease.Bake at 350 for 30-60 minutes.

Try toasting it as well.  A toaster oven will be your best bet.  Be sure to keep an eye on it as the edges toast quicker than the center of the bread slice.  Enjoy!

Easy Eggplant Bolognese

A special thanks to Everyday Paleo for providing this yummy recipe!

4 tablespoons bacon fat or coconut oil (I highly recommend using bacon fat for awesome flavor!)
2 medium sized Italian eggplants peeled and cubed (approximately 3-4 cups)
1 red bell pepper cut into bite size pieces
1 small red onion, sliced
1 pound ground beef
1 pound ground pork
1 teaspoon sea salt + more to taste
2 tablespoons red wine (you can sub with balsamic vinegar if you like)
3-4 garlic cloves minced
1 ½ cups tomato sauce (I love Bionaturea strained tomatoes!)
1 tablespoon dried oregano
Black pepper to taste
1. In a large soup pot, heat 2 tablespoons of the bacon fat over medium heat.  Add the eggplant and saute until tender, approximately 5-8 minutes.
2. Remove the eggplant from the pan and set aside.
3. Add the remaining 2 tablespoons of bacon fat to the pot and saute the bell peppers and onions until tender, about another 5-8  minutes.  Remove the peppers and onions from the pot and set aside as well.
4. Crumble the ground pork and ground beef into the pot and brown. Add the teaspoon of salt and stir.
5. Add the red wine and garlic and bring to a simmer.  Stir the simmering meat and wine until the alcohol smell starts to subside.
6. Add the eggplant, peppers, and onions back to the pan with the meat, pour in the tomato sauce, add the oregano, and some black pepper and bring to a simmer.
7. Taste and season with more sea salt if desired.
8. Serve in bowls and enjoy!
9. Feel free to serve over sauted or steamed veggies of your choice like zucchini, broccolini, julienned carrots, kale, etc.

5 eggs
½ cup raw, unfiltered honey
