Paleo Latkes
Shredded zuchinni, shredded carrots, 2 eggs, 1/2 cup almond meal, seasoning...heat skillet on low with 1/2 Tblsp of olive oil...mix everything and scoop into four piles onto skillet...cook for a few minutes on each side...FAST, YUMMY and FILLING!!!
